Almond Bread

Makes 30-40 crisps

Ingredients:
3 egg whites
1/3 C sugar
1/4 C flour
1/2 C flaked almonds
1/4 t cinnamon
1/4 t nutmeg
1/4 t ground ginger

Method:
1. Preheat oven to 160 degrees and grease a small loaf tin.
2. Beat whites whilst gradually adding sugar until stiff peaks form.
3. Sift in flour and spices and fold gently.
4. Fold in almonds.
5. Bake for 30-40 minutes or until firm to touch.
6. Wrap in aluminium foil and cool overnight.
7. Slice thinly and bake at 150 degrees until texture is dry and crispy.
8. Cool and store in an air tight container.
