Coconut Jelly

Makes 20 - 30 squares

Ingredients:
1 T agar agar powder
1 C sugar
400 mL coconut milk
3 egg whites
food colouring

Method:
1. Over low heat, melt agar agar in 400 mL water.
2. Add 3/4 C sugar and stir gently to dissolve.
3. Remove from heat and stir in coconut milk.
4. Beat egg whites with remaining sugar until stiff peaks form.
5. Stir whites into milk mixture.
6. Add a few drops of food colouring.
7. Strain into a cold dish.
8. Allow to set before cutting into squares and serving.
