Ah... such a shame about the wet weather over Easter this year. It's been really unfortunate that the last 8 or 9 Easters in the last 10 years have been wet. I'm sure many events are a washout but cake always brightens the day.

This was a special order Extra Large White Chocolate, Coconut and Raspberry Cake. Delivered in the pouring rain but hopefully there will be enough respite sometime this weekend to enjoy it with special people.
Rustic is the new expensive and posh. 

But to actually try to make something look rustic and "as is" is actually a lot harder than you think! 

The frosting was so yummy (so the feedback came back!). White chocolate, coconut and raspberry. Lots of people came back for second servings! ;) Yay!

We're stoked it turned out so well. A lot of time and effort went into this beautiful cake. And it was such a lovely day, perhaps a good sign for the new wedded couple. Enjoyed making this so much, love all the techniques. Think of us when planning your next wedding!!

This one is layers of peanut butter cake, vanilla cake and coconut white chocolate cake and covered in ivory and white fondant. So now.
Yield 1 x 10 inch

Ingredients:
250 g butter
3 C flour
4 T cornflour
1 t baking powder
1 t baking soda
1 3/4 C sugar
4 eggs, separated
1 C buttermilk
1/2 C coconut cream
1/2 C dessicated coconut
1 t vanilla
1 t coconut extract

Method:
1. Preheat oven to 160 degrees and grease and line baking tin.
2. Cream butter ans sugar until fluffy.
3. Add in egg yolks until blended.
4. Sift dry ingredients in a separate bowl.
5. Gradually add in milk and cream into butter mixture.
6. Beat in vanilla and sifted ingredients.
7. In a separate bowl, beat egg whites until stiff peaks form.
8. Fold whites into batter along with the dessicated coconut.
9. Bake for 30-40 minutes or until a skewer inserted into the centre comes out clean.
