Life's Simplest Pleasures

Two examples of tea time favourites that can be made from scratch, in and out of the oven in less than an hour. That's efficiency.

ANZAC biscuits are always a crowd favourite and they last forever. Our version is crispy on the outside and chewy in the middle. If you adjust the amount of golden syrup, you can get crunchy or chewy biscuits depending on your preference. Simple, staple ingredients of flour, sugar, coconut, oats and butter. Throw in nuts and dried fruit for a twist!

Friands. Another one of those french desserts that are "Aussie favourites". I'll be the first to admit that this is the first time I've ever made them. But they're light and springy and packed with almond, coconut and blueberries. They're sort of another take on a muffin - some might even argue that it's the healthier version since almond meal rather than flour (protein vs carbs) make up the body of this little treat. They're so easy to make as well so a great idea for when guests just 'drop by'.
