We pretty much covered all things Christmas-y this holiday with the one exception of Cupcakes! Arguably, we saved the best till last (or last minute!).

Why?

Been baking a lot of German-inspired cakes, biscuits and more cakes recently... just like the Black Forest Cake below with tons of whipped cream, kircsh, cherries and of course, chocolate shavings. Ginormous cake for a fundraising event... Think it was pretty popular! And we also made the even more popular Japonaise. Love the texture, the more layers, the better!

Not to mention our gingerbread, cheesecakes and other goodies for the holiday season.


Kris Kringle morning tea means... CAKE!!!

Baked Cheesecake for Santa and his helpers (this was a real treat, it was gone in seconds). And the best Carrot Cake with Cream Cheese Frosting for the reindeers... and all the rest of the people who stopped by!

Thought for a second that we'd never finish two cakes (didn't think there were that many of us!) but all gone and no crumbs left within the half-hour. Amazing.



We're becoming addicted to these sky high cakes... 4 layers of moist chocolate cake with lashings of hazelnut whipped chocolate ganache frosting in between and topped with handmade chocolate truffles with whole hazelnuts. This one is a real treat!

Inspired by the Ferrero Rocher... it's definietely beginning to look a lot like Christmas!


Got up really early for this one. We had a huge Christmas party to plan, cook and host and this cake had to be made the morning of another big party starting right on noon!

Lucky for us we're super organised!

4 layers of sponge with fresh cream, mangoes, peaches, straeberries and kiwk fruit. With more whipped cream and marshmallow flowers on top. Oh my...

8's a lucky number and this grandma is turning 85. Celebrating with her family and close friends. What a day for her :)



10 days till Christmas!

Making mini versions of everything to share the love. Christmas Cakes (the traditional fruit kind, having been fed with brandy for weeks and weeks) has been iced, packed and gifted, posted, sent away, eaten... nom nom.


And even brought a few of our cookies into the office to share. And yes, we've been very multiculter this year with our people. Yellow, short (chubs) shortbread man and skinny (better looking), dark gingy. And yes, it was a coincidence that it turned out that way...



Had am amazing day in the kitchen and thanks for our helped Donna today for her awesome contribution to decorating all our Christmas cookies today!

Made this yummy looking mummy and baby sized white chocolate and lemon mousse baked cheesecake with scorched meringue. Looks good, tastes good, smells good and made for sharing.



This afternoon was time to get stuck into more Christmas baking.

We finished our second batch of Belgium Cookies, made Passionfruit Shortbread, Sugar Cookies, Gingerbread boys and girls and...

THESE AWESOME GINGERBREAD HOUSES!!! ... A WHOLE CITY/TOWN/VILLAGE of them!

So much fun to make, bake and build and build and build. There are surprises in these too. Can't wait to gift them and share the love! Each house has their own sleigh and welcoming Tiny Teddy too.


And we even had some spare minutes to come up with these genius cookie christmas puddings. Again with surprises inside!




A beautiful day for a beautiful wedding overlooking Sydney Harbour.

Double tiers of both White Chocolate Passionfruit & Hazelnut Dark Chocolate complete this cake. These are gourmet flavours and on our favourites list! Sharp edges to highlight the cake (alas, if only we could make them all perfect like those you see in wedding magazines), large flower on top and ribbon to accentuate. The stenciling definitely brings a more traditional and elegant theme. White & gold ribbon is in stark contract to the black ribbon we had on our 3-tier cake in November. Elegance versus Chic one could say.

Another busy week coming up. Christmas baking and Birthday cakes are calling. Time to finish with a big bang!

Huge Huge HUGE weekend for us.

We had wedding samples to prepare, a double 2-tier wedding cake to start and of course... IT'S THE HOLIDAY SEASON WHICH MEANS BAKING BAKING BAKING!!!

Tons of cookies, almond bread, more cookies and we even threw in some red velvet cupcakes. First round of Christmas orders all set! It's only going to get busier from here... but...

We Can't wait till next weekend... we're doing our Gingerbread House challenge ;)

4 birthday celebration event!

We rather like it, do you? Sort of garden meets bouquet meets butterflies meets sunflowers meets fresh grass. And it was a really summery cake with mangoes and strawberries, nectarines and kiwi and lashings of whipped cream between a triple layer of sponge.

It's been another busy week in and out of the kitchen here and we've been running around all weekend in this weather catching up with amazing people and celebrating birthdays. We managed to finish this huge present cake (cherry chocolate & kirsch = black forest yummy-ness) right on time.

But still popular. A twist on this and we've included TWO layers of vanilla sponge and TWO thick layers of Cointreau creme patisserie . Sound delectable? Topped with summer fruits of kiwi, blueberry and strawberries from our very own garden... yum!!

We're stoked it turned out so well. A lot of time and effort went into this beautiful cake. And it was such a lovely day, perhaps a good sign for the new wedded couple. Enjoyed making this so much, love all the techniques. Think of us when planning your next wedding!!

This one is layers of peanut butter cake, vanilla cake and coconut white chocolate cake and covered in ivory and white fondant. So now.
Not nearly as extravagant as the french pastry chefs and the traditional french wedding cake but pretty good for a very very first attempt! Although did burn a couple of fingers in the process. Ouchy! No pain, no gain, no hard lessons learnt! Definitely won't be making the same mistakes twice...

Would love to try making a larger version of this! Too bad these towers don't last a long time (they are quite perishable as the pastry becomes soggy) so very exclusive for us to make... :)


We've had a pretty productive weekend here. Dished out a couple of yummy moreish cakes and experimented with a lot of new things. Even dabbled in some sugar art from toffee to delicate flower making.

Had our kitchen smelling awesome and then some!

Lots of prep work for our next big things over the weekend, huge three-tier wedding cake! so we spent a very relaxing morning doing some sugar art and making petals for peonies like the one below. productiveness = time well spent without the stress, and we spent our time well this weekend!

We've been pretty busy at Wynwyn's lately (on top of our other job!). And we're taking it one order, one week at a time. And we still get time leftover to enjoy the sunshine and weekends.

It's Sydney Good Food Month and there's heaps out there. Gave the noodle markets a miss this year but we're definitely going to try out at least a couple of Sugar Hits! Yum yum!

So our latest project is for a birthday boy who likes to go to the gym. And we were commissioned to make the yummiest vanilla bean, macadamia and strawberry cake. So we set to work and came up with this creation below. With all those weights to lift, am sure they can have as much cake as they want!




Berries are in season and so begins making them delicious! Stewing, baking, dehydrating, in pies, fresh, smoothies, juiced, the list is endless.

This one's a mixed berry baked cheesecake topped with fresh strawberries and blueberries, a white chocolate squiggle and strawberry glaze. Can I just say... it smells so delicious that I almost wish I got to have a piece too!

Just the right amount of berries (sweet and tart), cream cheese and a touch of sour cream to balance the flavours.

These are a great favor idea! Or gift idea. In this case, we've made 12 bags of these yummy cookies as gifts to take overseas. Genius idea! Personally, I would much rather receive something thoughtful, delicious and different than a packet of Tim Tams and a jar of Vegemite! Maybe paired with a good bottle of Australian Red Wine...?
And we've been commissioned to make our first NRL inspired cake. For the South Sydney Rabbitohs no less. This is supposed to be a birthday cake but it coincides very well with the finals series! Red & Green Velvet cake with White Chocolate Cream Cheese Frosting (and a hint of citrus!). So good...

Turned out to be a pretty tall cake. It's just over 4 inches high and should be enough to feel an NRL team! Or an office of about 30!

Winter has decided to visit again so we made tiramisu to go with a nice hot coffee! :)


Mid-week (most of your might refer to it as 'hump' day). And what better way to give flower than to give edible blooms? Pretty pastel (and rather bold red hues) cupcakes. We've got a fair bit going on here with the butterflies and mini daisies to the hand-made flowers with edible pearls. Sure to brighten up the rest of someone's week!

Albeit we've had a rather mild winter, the weather has literally spiked up a few degrees since entering the ninth month of the year. HELLO warm weather, sunshine and early mornings!

So decided to make (okay, so was approached by a client) to make an ice cream cake. First ever! In double chocolatemint choc chip. So we had twin layers of mint choc chip ice cream with a chocolate biscuit base followed by the softest layer of chocolate sour cream cake you can think of. And then finished with whipped dark chocolate ganache. Sound good??

Did lose a few winks of sleep worrying about delivery but all was well. Cooler bags and techni-ice work a treat! 


We've got the next two weekends off... scheduled for further learning (my brain is like a sponge... osmosis...) and then a wedding the weekend after. Don't worry, that won't stop us from baking...! :)
When it comes to toys, Lego has been around and around the block (no pun intended!). It's probably one of those items you'll always find in the toys section of a department store and always jumped on by kids. I was asked to make a 11th birthday cake this weekend and it was between Lego and Minecraft. I wouldn't be surprised if you're thinking... what's Minecraft? Probably the best summary is that its a kids game... on an iPhone / iPad / smartphone!

Anyways, Christopher decided to go with a timeless piece of square red lego. And look at how it's turned out:

Fruity cake for a picnic day birthday. A layer each of blueberry, strawberry and passionfruit frosting. So good!

MACARONS! Still the rage around town and to be honest, can probably say that they are still our Achille's Heel! Having said that, I did read an article not so long ago that professional bakeries and patisseries throw out approximately 20% of every batch of their macaron shells due to cracks in baking. 

These little beauties are pretty versatile which is probably one of the reasons why they are so popular. You can pick any colour, any flavour and you can even add flavours to the shells themselves. Not to mention there's the French method and the Italian method... (personally, the jury is still out on which method we prefer!).

They're a pretty little gift nicely packaged in a box. They go nicely with a cup of tea. Not much not to like about them right?

Feeling ambitious today and decided to play around with flavours and came up with the new Earl Grey & Cointreau infused Dark Chocolate. Delectable...

It almost felt like being on MasterChef and the Sunday Night Invention Test!

Was given the last of creating a cake for a farewell in the office this week and there was no brief! I could do anything i wanted!

I knew I wanted to make a cheesecake. And I knew most of the people in the office weren't keen on dense, designed cakes. Lashings of cream and soft centres seemed the way to go. Not to mention that the person whom the cake was originally intended for had just gotten braces so we had to go with something easily digestible!

And so this White Chocolate & Lemon Mousse Cheesecake with Scorched Meringue was born... yes, i know, it's a mouthful. But a yummy one at that.

Have to say it was a little nerve-wracking! It was the cake that I actually made for this office so knew I was going to be on the judging panel (and of course, it was all the more exciting with a couple of other avid bakers in the office!).

In the end, I think we only just had enough to feed the crowds. I honestly didn't know we had so many people in the office until Friday morning tea. Where did they all come from?!?! And very relieved (and happy, of course) that there were positive reviews all around! Yay! Someone even asked where I bought the cake from. Ha-ha... how flattering!!
